Products & Quality

Where does Satsuki source its matcha?

All Satsuki matcha comes from a single estate in Uji, Kyoto — Japan's oldest and most respected matcha-producing region. We import directly, eliminating distributors to ensure freshness and traceability.

Is your matcha organic?

Our Organic Matcha holds JAS (Japanese Agricultural Standard) organic certification, the Japanese equivalent of EU organic. Our Everyday Matcha is ceremonial-grade but not organically certified — the estate uses minimal chemical inputs but has not pursued organic certification for that line.

What's the difference between ceremonial and organic matcha?

Ceremonial-grade matcha (Everyday Matcha) is first-flush, shaded for 25–30 days, and stone-milled for smooth straight drinking. Organic Matcha is JAS-certified organic with balanced flavour suitable across all preparation styles — lattes, cooking, and straight.

What is hōjicha, and how is it different from matcha?

Hōjicha is green tea roasted over charcoal at high heat, which transforms its character from fresh and vegetal to warm, nutty, and caramel-like. The roasting also reduces caffeine to roughly 7 mg per serving compared to 68 mg for matcha, making it suitable for evenings.

How should I store matcha after opening?

Store in a cool, dark place — a kitchen cupboard away from heat is fine. Refrigerator storage is acceptable but bring to room temperature before opening to avoid condensation. Use within 6–8 weeks of opening for peak flavour.

How long does a 30 g tin last?

At 1.5 g per serving, a 30 g tin yields approximately 20 servings. For daily morning matcha, that's roughly three weeks of use.

Preparation & Brewing

What is the recommended brewing ratio?

1.5–2 g of matcha per 60 ml of water at 70 °C for usucha (thin matcha). For a latte, use 2 g per 30 ml water whisked to a paste, then add 150 ml steamed milk.

Do I need special equipment to prepare matcha?

A bamboo whisk (chasen) produces the best results for straight matcha, but it's not essential. A small kitchen whisk or electric milk frother works well, especially for lattes. Hōjicha requires no special equipment at all.

What water temperature should I use?

Use 70 °C for both the Everyday Matcha and the Organic Matcha. Hōjicha is more forgiving and can be brewed at 80–90 °C without bitterness. Avoid boiling water for all products — it will scald the leaves and produce a harsh flavour.

Can I use matcha in cooking and baking?

Yes. The Organic Matcha is particularly well-suited to baking — its balanced, clean profile holds up at moderate temperatures and mixes evenly into batters and doughs. Use 1–2 teaspoons per recipe depending on desired intensity.
