How to brew matcha.

    Sift the powder to break up clumps.

  2. Sieve

    Pass it through a fine sieve into your bowl.

  3. 70ml at 80°C

    Pour water just off the boil — not boiling.

  4. Whisk W-shape

    Quick wrist movement for 15 seconds. Frothy on top.
